まずは、お店の売り上げはどうやって決まるのか？
要素は3つです。
売上の出し方
１．お客様数 ２．来店頻度 ３．支払い金額
簡単に言えば、これをかけると売り上げが出ます。そこからお店ごとの計算をすれば、貴女の給料が決まる訳です。
だから、売り上げが減ってきたという事は、この3つの数字がさがってきているという事ですね。ではひとつづつ見ていきましょう。
１．今の貴女がお客さまと思っている数を数えてみましょう。
その中で一か月以内にお客さまになった人はどれくらいいますか？お客さまは常に新規を増やしていかないと、基本的には自然い減っていきます。
常に新規を増やしていく事を意識しましょう。
２．１で考えたお客さまそれぞれは、過去1カ月の来店頻度は今までと比べてどうでしょうか？
今まで月2回が、月1回とかになってないですか？
週3回が、2回とかになっていませんか？
対策としては、まめに連絡を取るしかないので、ここを怠っていないか、返事を遅らせたりしていないかなどを考えてみましょう。
３．最後は、1回あたりの金額です。
これは最初に来た時が基準になるので、そこから少しずつ増やしていきましょう。
お客さまは、大体予算がありますので、急に大幅にドリンクを頼んだり、延長を頼んだりすると、来店頻度が下がる可能性があります。
だから少しずつ単価の高いドリンクに変えていくとか、30分ずつ延長をせがんでみるという感じで、少しづつ単金を挙げていきましょう。
